For our bacon, we use bellies from heritage breeds of pigs raised by local farmers here in Oregon. Boasting a variety of robust flavors and excellent marbling, heritage pigs such as the Red Wattle, Guinea Hog and Duroc are wonderful animals that dedicated farmers work hard to preserve.
By buying meat from such heritage breeds, you'll experience pork like it should be, full of flavor and goodness. You'll also help preserve heritage hogs for future generations by creating demand for their meat. Those are some of the reasons we use only heritage breeds for Maialino.
